We are proud to offer freshly roasted coffee that is produced weekly right in the lower lobby of our cafe. We small-batch roast each week on our Diedrich Roaster, and offer a variety of beans that range from medium to dark roasts. We opened our shop in a former funeral home and, as you may have noticed, we like to pay homage to what the space used to be while having fun with some killer puns and (less than) subtle references. Veronica has been with us since day one, but took on roasting this past year when one our main roasters followed her passion for coffee out west to the coffee capital. After spending time learning under our previous Roaster Veronica took the reins and has been roasting her heart out ever since.

Jess stroupe
Jess has been a lover of coffee since she was 5 years old when her Nona gave her a cup of milk and sugar with a splash of Bustelo. She has been working with coffee for over 10 years and was thrilled to have an opportunity to expand her knowledge and continue improving her coffee skills at Undergrounds.
Jess has been roasting for Undergrounds since November 2022. She is currently a supervisor at both our Old First Ward and Seneca One locations. When she’s not at the coffee shop, you can find her cuddled up on the couch with her 3 cats, a cup of our Kenya roast in hand, reading a High Fantasy Novel.

white light blends
The White Light series, inspired by the ‘go towards the white light’ phenomenon people often experience near death, are heavenly blends crafted with the utmost thought and care. Each blend is specifically crafted to correlate with the killer lady chosen to be the namesake of that blend.
We dedicate many hours to creating each blend so that
the final product may humbly live up to, and honor, it’s namesake.

Ruth Bader Ginsberg, first Jewish and second woman to
be appointed as an associate Justice of the US Supreme Court, spent her legal career flourishing in the face of adversity. From her appointment in 1993 through her
death in 2020 R.B.G. served as an advocate for equality and woman's rights.Her ideas profoundly shaping
human self-understanding and shedding a bright light
on gender discrimination.
Just like R.B.G. this blend is equal parts bold and bright.
It harmoniously balances a floral aroma and complex fruit basket flavor with bright lemony sweetness and notes of milk chocolate, marzipan, peanut butter, cocoa and mild stone-fruit.
